   A new wine is a wine that has just stopped fermenting but is still of more recent vintage rather than an aged wine. new wine can be drank. Some wines have a better flavor after they age. Some wines are drier than others. Sweeter wines are usually dessert wines.
   Mead is a type of wine that is sweetened with honey instead of cane sugar. Most modern wines are made with white sugar. There are many types of mead. In ancient times, much of the yeast used in wine or mead making in ancient times came from the honey used to sweeten the wine.
   Mead making is an art and sometimes a science. Some of us have been known to experiment. I'm not saying it was all necessarily the tastiest but some of it was potent... We actually produced some mead that was 20% alc. and some a bit above that as well as some below. We just wanted to know how far we could "push" the yeast.
